Among the most exquisite tuscan pecorino cheese, “Marzolino” is well known for its characteristic oval shape. It is generally produced during springtime, when the grazing land is more tender and perfumed.
This is a particularly soft and delicate cheese, with an ivory coloured texture preserving the whole aroma of the spring grazing lands. The farming habit is to eat it with runner beans.
