Gran Reserva represents the most ancient rural tradition in Tuscany. The cheese wheels were produced in spring, during the period of abundance of milk, and after a long ripening process, they became part of the farm family’s provisions.
Even now, Gran Reserva Pecorino cheese is produced in March, April and May, when milk is rich in taste and aroma. The rind is yellow coloured, the texture is compact and soft when cut, and its complex and intense perfume reveals a bold and persistent flavour. Both fresh fruits, such as figs, pears, grapes, and dried fruits like nuts and almonds are a great match. Regarding wines, we recommend strong ones, e.g. Brunello di Montalcino and Nobile di Montepulciano.
